You might come for the golf but stay for the dinner. Then again, you might come for dinner and decide to play golf. Either way, you'll want to plan a day at the Classic Club in Palm Desert. The host course for this month's Bob Hope Chrysler Classic recently swung open the doors to its Tuscan-inspired clubhouse. The crown jewel of the facility is the Rattlesnake restaurant. Established by restaurant owner and chef Jimmy Schmidt, the Rattlesnake features organic ingredients used in modern American cuisine. "We're pulling from the Coachella Valley's seasonal offerings - artichokes, chilies, squash, dates," said executive chef Brian Recor. "Daily specials will be determined by the best of what's grown locally." While Schmidt, who also runs the original Rattlesnake in Detroit, has designed the menu, Recor will be adding his own light layers of flavors. And the food speaks for itself. Appetizers include a portobello mushroom salad with roasted squash, topped with micro greens and a truffle oil and syrah dressing. In the mood for a steak? The filet, infused with cocoa, chili powder and coffee, is served on a bed of cipollini onions seasoned with a red wine essence and accompanied by a squash and potato gratin. There's no shortage of dishes from the sea, either. Seared scallops encrusted with coriander are served on polenta with fresh roasted corn topped with a basil essence and Parmesan. "The combination of a world-class restaurant and a world-class golf course will suit everyone," said Classic Club general manager Greg Rubino. "The food is innovative, offering the best cuts of meat in the desert." The 130-seat restaurant - which has a private dining room that accommodates another 150 - is on the second floor of the three-story clubhouse. Directly below is the outdoor cafe that overlooks the golf course and is climate-controlled all year long. Casual dining on the patio includes breakfast burritos and omelets in the morning, and sandwiches, wraps and salads on the lunch menu.
